Toni Carbó and Anna Serra are the couple behind Celler la Salada, who in just a few years has built a reputation for producing unpretentious and extremely refreshing wines of convincingly high quality. Toni and his friend Ramon Jane Garriga also run the vineyard Mas Candí in Les Gunyoles, but next to this project Toni has created Celler la Salada, where he makes wines from the family’s own vineyards at El Pla del Penedès.

Toni is privileged enough that all of the family’s vineyards are planted with old vines that have never been subjected to intensive cultivation. Subsequently, he has been able to harvest very healthy grapes and vinify without the addition of sulphur from the beginning. The vineyards are planted with traditional grapes such as Sumoll, Macabeu, Xarel-lo, and Parellada, but Toni also grows a number of more or less forgotten varieties, which were widespread in the area in his grandfather’s generation. In the cellar, Toni works without cultured yeast, added sulphur, fining or filtration. The wines are fun, juicy, easily drinkable and even affordable.
