Thomas Tixier
Thomas Tixier makes Chablis the way it is supposed to. He belongs in Courgis close to Alice & Olivier De Moor that are his friends and colleagues as well as a great inspiration to him. Connoisseurs will clearly be able to sense the similarities, but having said that, Thomas has found his very own expression. The wines are free, mineral and acidic with a clear impression of their terroir. In fact, we are absolutely thrilled to have found a Chablis producer who insists that wine is made in the vineyard and not in the cellar.
Thomas Tixier took over the family domaine and its eight hectares in 2007. After traveling around large parts of France, he decided to concentrate on only four hectares to be able to work more focused and in accordance with his beliefs including converting to organic farming.
In the cellar, Thomas works hands-off with a fundamental understanding that when working without additives the most important factors are healthy grapes, time and patience. The result is a series of wines that demonstrate in the best possible way how amazing Chablis can be in the right hands.
