2023 Grain Rose - Gamay

Domaine des Ourobores still flies a bit under the radar, as the first vintage was 2022 and the quantities are very small, but for us there is no doubt about the huge potential that this small domaine in Jura possesses. Nicolas-Julian Hilbold simply makes amazing wine and is a pleasure to work with.

Nicolas-Julian has a background as a chemist and an engineer, and it was not until 2018 that his love of wine – in combination with the desire for a simpler life closer to nature – made him make a drastic change. First, he worked for various winegrowers in Switzerland before moving on to Jura, where he ended up buying 1.5 hectares in Arbois.

All the typical Jura varieties grow in the vineyards, which are carefully cultivated. In winter, goats and sheep roam freely, while Nicolas-Julian creates the best possible conditions for nature and biodiversity to thrive. The vinification relies on a simple and rational approach as well as centuries of handed down knowledge. He adapts his approach to each individual cuvée with great attention to detail and no unnecessary additions in the cellar.

The wines from Domaine des Ourobores are true to their origins and are made with as little human interference as possible with the aim of producing free wines that are remarkably easy to drink.
