Clément Perseval
Champagne Clément Perseval was founded in 2010 by Clément Perseval in Chamery. The family has been growing wine in the area for ten generations, but Clément’s father, Gérard, was the first who began producing Champagne himself in the 1980s. Clément has experience from working in Burgundy, and in Champagne he has worked for Anselme Selosse, whose influence is clearly reflected in his style.
The work is heavily focused on the vineyards, using organic and partly biodynamic methods, and since 2019 the estate has been in conversion to organic certification. Intervention in the cellar is kept to a minimum to let the terroir speak for itself. All vineyards are located exclusively in Chamery, meaning every Champagne is Premier Cru and each parcel is vinified separately.
The style is vinous, energetic and precise with a fine mousse, pronounced minerality, a subtle salinity and a clear imprint of long bottle aging. The range stretches from the entry-level 1er Cru Chamery cuvée to Blanc de Blancs, Blanc de Noirs, rosé and ambitious single-vineyard and vintage Champagnes with extended ageing on the lees, often up to eight years. All wines are bottled as extra brut, but are in reality bone dry, with residual sugar levels between 0.5–1.5 grams.
Clément Perseval’s Champagnes are particularly appealing to the experienced Champagne enthusiast and pair excellently with food.
