Avis de Tempête
To ensure a certain yield every year, Arbois-based Raphaël Monnier (Domaine Ratapoil) buys grapes from different regions of France every year and sells them under the name of Avis de Tempête. The name means storm warning and refers to the threats from nature, which can ruin the entire yield with a single hailstorm.
Similar to the vinification at Domaine Ratapoil, only natural yeasts are used, while additives, fining and filtration are banned. In addition to acting as a form of safety net, Avis de Tempête contributes with experimental and exciting cuvées, which are only found in one vintage.
