2022 Pernand-Vergelesses - Les Belles Filles

Since the beginning of 2020, Si Tu Sais has been on everyone’s lips, and it is honestly a huge privilege that we have now received the first shipment to Denmark after a great dialogue with Patrick & Sara, who are the couple behind the winery. They have a past in London’s financial district but turned things upside down and took work for Maison Harbor in Savigny-les-Beaune for a number of years. The couple ended up falling for Burgundy and decided to settle in Chamilly in 2020 to start their own project.

In the cellar, they have taken their experience from Maison Harbor with them, but they have already shown their own style, which combines their curiosity with a great sense of detail. Where Maison Harbor, for example, always works with de-stemmed grapes for its red wines, Patrick and Sara mostly use whole cluster fermentation, which they have already shown to fully master. The whites are similarly impressive and unmanipulated, but at the same time extremely serious with enormous precision and depth.

If it’s not already obvious, we are full of admiration for the work that Patrick & Sara put into Si Tu Sais and the wines that come out of it. It also doesn’t hurt that the two are an extremely likeable couple and really pleasant company. The production itself is completely minimal, but we are grateful for the few bottles that we have received. In other words, this is one of those cases, where you need to strike when the opportunity presents itself.
